Via Mare: 50 Years of Filipino Culinary Excellence

It was a celebration of great food and an inspiring journey of excellence as the iconic Filipino restaurant, Via Mare, marked its 50th anniversary. We were invited to the Modern-Filipiniana–themed event, Salinlahi: Generations of Taste where we met the people behind the brand and indulged in a feast of beloved Filipino favorites.

The program opened with a welcoming speech by Ramon ”Rany” Roño followed by the unveiling of the brand video that showcased Via Mare’s history, journey, and commitment to continue delighting Filipinos and the world with world- class Filipino cuisine. Ms. Glenda Rosales Barretto, visionary and founder of Via Mare, delivered her speech to thank the guests and further solidify the commitment of Via Mare.

The special menu featured a curated selection of Filipino favorites with a modern twist, including Tinola Flan, Mini Shrimp and Vegetable Ukoy, Dinuguan Terrine, Ensaladang Pako, Petite Pandesal with Laguna Cheese, Lumpiang Binondo, Balut Surprise, Crispy Luglog, Arroz Caldo Especial, Porchetta Manileña, Coconut Pannacotta with Latik and Mango Balls, and Petite Bibingka Galapong.

In the ever-changing landscape of the food industry, reaching 50 years is no small achievement. Throughout challenges and shifts, Via Mare has leaned on what they call their quiet strength—the secret behind their longevity in such a competitive field.

We’ve remained true to our mission of preserving the authenticity of Filipino cuisine by sourcing fresh, high-quality local ingredients, putting thoughtful care into every dish, and creating meaningful connections with our customers.

One of the biggest challenges for any restaurant is staying relevant across generations. Winning the loyalty of existing customers is already an achievement—but attracting new ones is an entirely different feat. For the past 50 years, Via Mare has done both, capturing the hearts of every generation by listening closely to its customers while staying true to its core.

As Ramon “Rany” Roño explains, “We’ve learned to listen to our customers’ needs without losing sight of our core values. While our menu continues to feature the timeless Filipino dishes that defined us, we’ve also introduced new items, ready-to-eat options, and seasonal offerings—which have kept us current and thriving.”

Another secret to lasting for 50 years? Continuous evolution not only in food offerings, but operations and management perspectives as well. Ramon ”Rany” Roño shared “Over the years, Via Mare adapted to the food and dining trends, digitalization and modern lifestyle. What hasn’t changed is our definition of what the “Via Mare experience” is – to serve our customers with excellence while honoring the authenticity of Filipino cuisine.

What’s next for Via Mare? “It is my dream to see Via Mare flourish another 50 years more. That it be passed on to the next generations, keeping our mission alive of promoting Filipino cuisine, advocating Filipino talent and delivering exceptional customer service.” says Via Mare President Ramon ”Rany” Roño. 

History of Via Mare

Founded in 1975 by Glenda Rosales Barretto and friends, a visionary in the realm of Filipino cuisine, Via Mare was born out of a passion to bring the flavors of the Philippines to a broader audience. The name “Via Mare,” which means “by the sea” in Latin, reflects the restaurant’s initial focus on seafood dishes, inspired by the bountiful waters surrounding the archipelago.

Achievements and Contributions

Culinary Excellence- Via Mare has consistently been at the forefront of the Filipino culinary scene, celebrated for its impeccable execution of traditional dishes such as Pancit Luglog, Laswa, Ensaladang Bagnet, and Bibingka to name a few. 

Cultural Ambassador- As a cultural ambassador, Via Mare has played a pivotal role in promoting Filipino cuisine on the global stage. The restaurant has participated in numerous international food festivals and culinary events, showcasing the rich and diverse flavors of the Philippines to an international audience.

Catering to Prestigious Events- Via Mare has also catered to numerous prestigious events, including state dinners and banquets hosted by the Philippine government such as the Manila International Film Festival, 1995 Miss Universe pageant in Manila, the papal visit of then Pope John Paul II, the 1996 Asia Pacific Economic Cooperation Summit, the gala of the Philippine-run of West End’s Miss Saigon, and the 2007 ASEAN Summit in Cebu to name a few.
