Easy Recipe: Blackened Salmon Taco
I used Seaking Keta Salmon as ground beef/ground pork substitute for this taco recipe.
Life has been a little hectic lately – juggling travels, new projects and new hobby. This is when I got to appreciate quick, easy meal preparations. Although my mom cooks for us everyday, I want to make sure that I also allot time to help her – challenging myself to be more productive while forming new habits.
Planning for a meal becomes more challenging for us because of several factors: (1) the swine flu outbreak – which means we do not buy/eat pork, (2) I want to eat only 1,000 calories per day because I want to lose the stored fats, and (3) I want to eat more greens and vegetables (inspired by the recent Organic Farm Tour – will tell more about it on a separate post).
The universe probably heard me, and we received SeaKing Wild Alaskan Keta Salmon products that have salmon chunks, slab, belly, and steaks.
Craving for Tacos yesterday, I decided to use the SeaKing Keka Salmon Chunks as substitute for ground pork. I like that SeaKing has different salmon products perfect for different recipes and cooking methods. This saves us alot of time.
I seasoned the Seaking Keta Salmon Chunks with salt, pepper and chili powder (I do not have Cajun Powder – so the Chili Powder is a good substitute). I cooked it using extra-virgin olive oil in low heat.
Then I use the usual ingredients of salsa (I just bought from the grocery), lettuce, and grated cheese. To add more flavors to it, I added cilantro, and pineapple. I would have wanted to add avocadoes but they are not currently available in my fave grocery store.
This is a very quick and easy recipe that you can prepare in less than 15 minutes! You can make a variation for this recipe by doing a pizza topped with Blackened Salmon.
