The lively, colorful colors of summer are starting to become more pronounced in our daily lives, including our breakfast and dinner tables. Among the beloved summer dishes I’ve been eager to recreate at home is the classic Avocado toast.
Avocado, with its creamy texture and delightful flavor, is one of my favorite fruits. While it’s undeniably delicious on its own, this versatile fruit serves not only as a dessert but also as a delightful sandwich filling. Packed with healthy fats, fiber, vitamins, and minerals, avocados offer a nutritional boost to any meal To make my Avocado Toast a lot more filling, I opted to incorporate U.S. Navy Beans into my recipe.
U.S. Navy Beans, also known as U.S. White Beans, are a superfood that are packed with essential nutrients and health benefits. U.S. Navy Beans are high fiber content, making them excellent for digestive health. Additionally, they serve as a great source of protein while being low in fat. Notably, they contribute to blood sugar regulation and may aid in lowering cholesterol levels.
U.S. Navy Beans are also very versatile and can be used in various dishes, including soups, stews, salads, and dips. They absorb flavors well and can enhance the taste and texture of many recipes.
White Bean and Avocado Sandwich
What you will need:
2 medium avocados
1 cup white beans, cooked and mashed
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
1 clove garlic, grated
¼ teaspoon chopped fresh thyme or cilantro
¼ teaspoon ground pepper
8 slices whole-wheat bread, toasted
1 medium-size red peppers, roasted and chopped
8 slices of Cheddar cheese
4 cups lettuce
Directions:
1. In a medium bowl, combine mashed avocados, U.S. Navy Beans, freshly squeezed lemon juice, a drizzle of oil, minced garlic, and your choice of fresh thyme or cilantro. Mix well until ingredients are thoroughly combined, aiming for a slightly chunky texture.
On slices of whole wheat bread, arrange a layer of crisp lettuce leaves as the base. Spoon two tablespoons of the avocado and navy beans mixture over the lettuce. Add slices of bell pepper and a single slice of cheese on top.
Finish by placing another slice of whole wheat bread over the filling to create a sandwich. Serve alongside your favorite juice for a refreshing meal that’s as nutritious as it is delicious.
